Frances Rossetti&#8217;s rum punch."},"content":{"rendered":"<div id=\"attachment_1618\" style=\"width: 310px\" class=\"wp-caption alignright\"><a href=\"http:\/\/www.rossettiarchive.org\/docs\/s451.rap.html\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1618\" class=\"size-full wp-image-1618\" style=\"line-height: 18px;\" title=\"Frances Rossetti\" alt=\"\" src=\"http:\/\/verityholloway.com\/wp-content\/uploads\/2012\/12\/francesrossetti.jpg\" width=\"300\" height=\"378\" \/><\/a><p id=\"caption-attachment-1618\" class=\"wp-caption-text\">Frances Mary Lavinia Polidori Rossetti<\/p><\/div>\n<p>With kind permission from the University of British Columbia, and the help of author of <a href=\"https:\/\/twitter.com\/preraphsrule\"><em>The Rossettis In Wonderland<\/em><\/a>, Dinah Roe, I have a Christmas treat to share with you: Mama Frances Rossetti&#8217;s recipe for a\u00a0frightfully boozy rum punch!<\/p>\n<p>The Rossetti family&#8217;s little London parlour was always crammed with displaced Italian revolutionaries, carousing and debating while the cat warmed herself in front of the fire.\u00a0Christina talks about &#8220;chestnuts, cake, and a social glass of grog&#8221;, although Dante Gabriel didn&#8217;t drink at all until much later in life. (That didn&#8217;t stop him, as a child, from feeding beer to a hedgehog and watching it stagger about, the unusual boy). However, I like to think he partook of the occasional sip of family punch. Especially if it was anywhere near as tasty as my attempt!<\/p>\n<p><strong>Let&#8217;s give it a go, shall we?<\/strong><\/p>\n<p>Frances doesn&#8217;t give especially detailed instructions, so most of this is guesswork verging on generosity.\u00a0Here&#8217;s the recipe as it appears in Frances&#8217; recipe book:<\/p>\n<p><em>2 lemons<\/em><br \/>\n<em>1 orange<\/em><br \/>\n<em>Rum<\/em><br \/>\n<em>Brandy<\/em><br \/>\n<em>Lump sugar to taste<\/em><\/p>\n<p><em>The lemons being first scraped white, therewith, boiling water.<\/em><\/p>\n<p>Looking for further details, I found\u00a0<a href=\"http:\/\/www.npr.org\/2010\/12\/30\/132444994\/a-vintage-cocktail-that-packs-a-punch\">this fantastic article<\/a> on Charles Dickens&#8217; favourite punch, circa 1847, involving a pint of rum (!) and a glass of brandy. That, between myself and <a href=\"http:\/\/gabrielmay.com\">Mr May<\/a>, would be lethal, so I&#8217;m going to tone down the quantities a bit for the sake of propriety.<\/p>\n<p><strong>Yes, this is classed as research.<\/strong><\/p>\n<div id=\"attachment_1732\" style=\"width: 321px\" class=\"wp-caption alignright\"><a style=\"color: #ff4b33;\" href=\"http:\/\/verityholloway.com\/wp-content\/uploads\/2012\/12\/P1030534.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1732\" class=\" wp-image-1732     \" title=\"Oranges and lemons\" alt=\"\" src=\"http:\/\/verityholloway.com\/wp-content\/uploads\/2012\/12\/P1030534.jpg\" width=\"311\" height=\"233\" \/><\/a><p id=\"caption-attachment-1732\" class=\"wp-caption-text\">&#8230;said the bells of Saint Clements.<\/p><\/div>\n<p>I sliced the lemons (first scraping them white with a knife, because for some reason I don&#8217;t own cheese grater) and cut the orange into four. I ended up slicing the lemons in half because I didn&#8217;t quite believe the juice would get out through the zest. Maybe that was a mistake. We&#8217;ll see.<\/p>\n<p>On the hob, I boiled a pint and a half of water, brought it off the boil and added the fruit. I left the lot to simmer for three minutes while I repeatedly got the maths wrong and\u00a0ended up deciding on half a pint of rum, which, on reflection, was a bit much. <em>Oh, well<\/em>.<\/p>\n<p>Both the brandy and rum were the finest El Cheapo supermarket bathtub plonk, because, unlike the myriad characteristics of gin, all brands of rum taste to me like aviation fuel.\u00a0So I added the half pint of rum directly into the pan over a gentle heat, letting it &#8216;mull&#8217; a bit in the fruit juice, which was beginning to smell pleasantly like Christmas cake.<\/p>\n<p>I then &#8216;measured&#8217; out roughly a quarter of a pint of brandy.\u00a0I&#8217;m not used to brandy (the stuff I used smelled like a dentist&#8217;s surgery) so I took Charles Dickens&#8217; advice (<a href=\"http:\/\/verityholloway.com\/?p=87\">sorry, Uncle Thomas<\/a>) and spooned it in, setting it alight spoon by spoon. To what benefit, I can&#8217;t say, but it made a nice &#8220;voomph!&#8221; sound and made me feel like some kind of pagan Goddess of winter debauchery.<\/p>\n<p><strong>At this point, mind your hair.<\/strong><\/p>\n<p>So! Next, I had a little taste test, resulting in flashbacks to childhood toothache remedies. It was quite bitter, and the lemons had crumpled slightly, leaving floating bits of lemon on the surface. I don&#8217;t know what Mrs Rossetti would have done, but she seemed the sensible type, so I removed the lemons and let the oranges take over.<\/p>\n<p>I added a liberal quantity of brown sugar, and stirred the punch for a few minutes. The rum really needs a bit of sweetness to balance it out, but it&#8217;s all personal taste.<\/p>\n<p>Once the lemons were out, the punch began to taste much more recognisably fruity (I suspect winter lemons in this country are just a bit mean-tasting) and the sugar and alcohol complemented each other nicely.<\/p>\n<div id=\"attachment_1738\" style=\"width: 262px\" class=\"wp-caption alignleft\"><a href=\"http:\/\/verityholloway.com\/wp-content\/uploads\/2012\/12\/grog1.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1738\" class=\" wp-image-1738   \" title=\"Grog\" alt=\"\" src=\"http:\/\/verityholloway.com\/wp-content\/uploads\/2012\/12\/grog1.jpg\" width=\"252\" height=\"336\" \/><\/a><p id=\"caption-attachment-1738\" class=\"wp-caption-text\">Serving suggestion: On the face of Holbein&#8217;s Ambassador<\/p><\/div>\n<p>* Don&#8217;t let it boil<br \/>\n* Take a distinctly un-Victorian swizzle stick and give it a good stir.<br \/>\n* Pour into a tall glass\u00a0<del>because I don&#8217;t own any other kind of glass.<br \/>\n<\/del>*\u00a0As Christina wisely suggested, add cake.<del><br \/>\n<\/del>* Toast General Pepe, repeat.<\/p>\n<p>It actually tastes delicious.\u00a0It is distinctly piratey &#8211; grog! &#8211; though the citron gives it a more festive kick than something you&#8217;d swig before pillaging a small coastal town.<\/p>\n<p><strong>Queer loaves are the best loaves.\u00a0<\/strong><\/p>\n<p>Frances did her best to reproduce Italian food for her family. Indeed, Dante Gabriel was still sourcing cannelloni from Soho decades later. However, I always think of him when I buy my Christmas panettone. In 1874, <a href=\"http:\/\/books.google.co.uk\/books?id=a8ciRhA1NPUC&amp;pg=PA580&amp;lpg=PA580&amp;dq=%22that+queer+loaf%22&amp;source=bl&amp;ots=R3kFC9d7GZ&amp;sig=KKqRdIcNjYzNesndYs67WIRUMQc&amp;hl=en&amp;sa=X&amp;ei=darUUM_hPMfY0QXL54GoDA&amp;ved=0CDMQ6AEwAA#v=onepage&amp;q=%22that%20queer%20loaf%22&amp;f=false\">he wrote to Frances<\/a>:<\/p>\n<p><em>I have been painting from a little Italian boy who highly appreciates Toscone; but on my giving him a piece of Panattone (that queer loaf) he said in a startled tone, &#8220;Quanto costa questo?&#8221;* I replied &#8220;Non credo molto,&#8221; &amp; he rejoined &#8220;Crederei quasi neinte&#8221;.
